     Every year I wonder what field trip can we do next? I am always trying to find new ideas and places to go. And some field trips we do over and over because we just have no clue where to go next. So I thought it might be a good idea this year to research on some places to go. And what my research has found is a crazy amount of places we can go. Now some are just way to far to travel for our family. All day trips are not only hard for my medical conditions. But for my sons as well. But this list as a lot of not so far away places we can go to. But I thought I would put them all on here just in case there are places you are willing to go. I am excited to explore these different places this year.

   So I thought I would start blogging again. And what better way to start off blogging again with talking about what I will be doing for this coming up school year. We plan on starting our homeschooling first day on August 9th. And while we don't have to follow any school district calendar. I like to follow my mother in laws because she works for a school district and she likes taking the kids on her vacation times. So this works best for us. So August 9th it is.

   I started recently implementing a lot of Montessori activities and ideas into my son's homeschooling routine. Our school room is center based and he can move around the room. I love most of the Montessori activities and materials out there available. However, my issue is that they are all very expensive. And getting your hands on cheap used materials is hard as well. So either I am doing DIY projects or I am looking for affordable alternative materials to use.

12 years ago Today




   While I do not celebrate birthdays with parties and gifts for religious reasons. We respect the day of our birth and our children. As well as individuals respecting Jehovah for giving us this gracious gift of life and respecting our parents going through all the pains of giving labor and raising us to become the amazing adults we are today. 


   Today my daughter turned 12 years old. Each day not just each year I am so very thankful that Jehovah has allowed me to be her parent. Putting her life in my hands to raise and become an amazing adult. And I thank him for that. I thank him for this gift each and every day. Not a minute passes that I don't think about how close I came to losing her. How close she came to losing me 12 years ago today.

   It was a very scary day. I was very sick. She was very sick. We both had E-coli because my water broke a month to early and nobody listened to me. I spiked a fever of over 105 and my body was shutting down and swelling up from eclampsia. I gained over 60 pounds of water overnight. But not only was my body slowly shutting down so was hers. After an Emergency C-section, lots of blood loss and a long stay in the hospital we both got to go home.

   It was a very big day for us both when she got to come home. I left the hospital a week earlier before she did. Granted it turned out I should have stayed. Infection set in. A bad one. I had to be reopened and packed from the inside and heal with an opened incision to keep the infection from building back up.

   But she got to come home when this happened. I was NOT about to be put back in the hospital at all. So I healed at home. With the help with a nurse that would come daily to take my vitals and care for my incision. Soon though the Insurance would no longer pay for it. So they taught my mom how to care for me.

   It took a while, but we both recovered from this experience. And now 12 years later. Minus the fact we do have to watch her Organs, and she risks getting E-coli easier than the average person. She is really healthy.

   This day also marks another tragic situation in our family as well. While I was laying in recovery to the unknown if I was going to make it through the blood loss, high fever, a severe case of E-coli, and Eclampsia. My cousin was having surgery for a Craniopharyngioma tumor that would forever change his life and eventually took his life in March of 2011.

   Forever these life-threatening events affect our life. It was the start to my battle with MS and other medical issues. But the beauty that came from such pain and sacrifice is a beautiful amazing daughter.

   She has had to grow up fast in a world of disabilities and special needs. She has taken on much responsibility. None that could have been prevented. She has taken it on with such grace, respect, pride, and honor.

   She is funny and amazing. She makes me laugh on a daily basis. She reminds me of me and a better me. Her beauty is like no other. Exotic, natural and raw.

I am forever thankful for this young lady being in my life. And I am honored to be her mother. Thank You again Jehovah for giving me this gift to take care of. I hope I am doing everything right in your eyes to raise such an amazing child.

Homemade Flour Tortillas

My HomeMade Flour Tortillas



   After a few questions on what recipes I use for my Flour Tortillas. Here are two versions I use. The first one is NOT Vegan or Vegetarian and produces a thicker flour tortilla in my opinion. The second one is a Vegan/Vegetarian-Friendly recipe. These are the basic recipes the flour can be subbed for a GF flour or an einkorn flour. If this is your first time making them. There are TONS of Youtube videos showing how to make them. And all kinds of variations to these recipes. I have seen some put in bacon grease into their tortillas. And I am sure you can put whatever yummy seasons you want them. Go Crazy and find what you and your family love. 

(Thicker soft taco flour tortilla)
Makes about 24 flour tortillas depending on the size you want

 4 cups all-purpose flour **I use Einkorn and or an All Purpose flour. Use flour of your choice if you need to go GF** DONT use self-rising.
 1 teaspoon salt ** I use Pink salt to make it more healthy
 2 teaspoons baking powder
 2 tablespoons lard **You can use Organic Lard**
 1 1/2 cups water **Make sure it is HOT water**

Directions:

Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the HOT water a little at a time and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Set aside in a bowl for a half hour or more covered with a moist towel. If it is not soft enough let set longer.

Preheat a large skillet over medium-high heat or a griddle. I like to use a cast iron skillet. That works best for me. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Don't fuss over them not being perfectly round. I am still getting the roundness down. But they are pretty round for the most part. Trick to get them round. Roll forward once turn, roll backward once turn. Turn as you roll them out to help keep that round tortilla shape. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. With a hot prepared skillet, this is about 15 to 30 seconds per aside. Depending on how crispy you want them. If you are going to use them to make cheese quesadillas keep in mind to not over cook them. As you will be cooking them again and you don't want them to be too brown and burned from the second cooking process. Place the cooked tortilla in a tortilla warmer or under a towel if you don't have a warmer to keep them fresh and hot; continue rolling and cooking the remaining dough.

Second Recipe:

I find this recipe the tortillas are thinner and wrap better into a burrito for me personally. 

**Vegan/Vegetarian-Friendly. Produces a thinner tortilla for me. Perfect for folding them for burritos and breakfast burritos.**

Makes a Dozen smaller flour tortillas. Double or triple recipe to make a bigger size or more tortillas.

1/3 cup Olive oil ** Or oil of your choice. Vegetable, Coconut oil. Whatever oil you like**

  I want to get a Tortilla press. The whole experience of rolling out your tortillas is awesome. However, with my MS it will be in my best interest to get a Tortilla Press to help take out an extra step so I am not worn out for days after making homemade flour tortillas. Once you make homemade you will be spoiled and never want to go back to store brand at all.

   I have been wanting to try fiber lashes for a while now. They are all the rage. However, I had been waiting to use them. Why? Because I have had multiple eye surgeries and had to have an eye removal done as well last October. I have been super depressed the way my eyes look. I am very self-conscience the way the eye looks that has been removed. I do have a prosthetic, but it does look smaller and sunken back more than the eye that I have left. I was looking for a way to make my eye look more normal. I have very short eyelashes so it also made it look a lot worse as well.

Monday:
   So Monday early morning. And when I am talking early morning I am talking around midnight. I got this brilliant idea I was going to deep clean the kitchen. I don't know about anyone else. But I get a lot of my cleaning done when the family is asleep. Mario did help me some in the kitchen and did keep me company at least. I also seem to work better when I have his support. I am not sure why. I get the most done when the kids are sleeping, but I also seem to need my husband. I know I am crazy.

   So I have spent the last week really going through my stuff. Asking myself "Does this item bring some kind of joy to my life?" If the answer was NO. Then I gave it away or tossed it out. At first I tried re-homing my stuff. I did have some luck in people coming and picking things up from what we call "curb alerts" in our community. That is when we sit out unwanted items for people to pick up if they have some kind of interest. I think people lost momentum or just did not want to take my junk. Granted there was nothing wrong with everything. But maybe they knew it would not bring any joy to them as well. Needless to say, I had to toss the rest because I could not keep it outside any longer. The homeowners association can be so darn picky sometimes.

   I love kitchen tools. I am always looking for great products to try out in my kitchen. I have never been satisfied with kitchen utensil sets. Mostly because plastic melt when using in past non-stick cookware that I used damaged my cookware. I used to have a Rachel Ray set of non-stick cook wear. I say used to, because they have been rehomed recently. The problem is even plastic seem to scratch non-stick cookware. And then you have the issue with plastic melting if it's left on the pot or pan too long, because it can't withstand high heat. And then of course metal will completely ruin your non-stick cookware even glassware as well. I do tend to like metal for cast iron pans, but these are perfect for my cast iron as well. 

Was it a dress fail? Making clothing fails work.

   If you read my weekend update a few weeks back you would have seen I bought this dress, the picture to the left for a graduation party I was going to. I got it on Ebay and it was under party dresses. When you look at the picture it seems like a dress you could dress up for a party. The neckline in the picture is low but seemed doable. I scored this dress on Ebay for under 14 dollars and that was including shipping. I was actually really excited about my find. 


   The dress arrived in the mail just shy of a few days from the party date. I was so excited. I opened it up quickly. So what did I find?

It's that time again for another weekend update
I hope everyone had a wonderful week!!!



   Monday started officially my husband's vacation. It was so nice to have him home with us for the week. Monday was my son's doctors appointment. I guess you could call it a follow-up appointment. Not really a check up of any kind. But we needed new RX refills on some medications, new RX's for his therapies for OT, SLP, and PT. DDD needs these once a year and I guess it was that time again. The place we go to seems to have a revolving door when it comes to doctors. Every time I turn around there is a new doctor there. So it was our first time seeing this new, well not even a doctor it was an NP. But she was nice.

   I am forever drowning in clutter. For such a big home. And when I say a big home we have a 7 bedroom, 4 bath home. But like I was saying. For such a big home, we don't have a lot of storage space. So I forever feel like I am drowning in stuff and clutter. It makes me depressed. It makes me not want to do anything. It makes me not care anymore. And that makes me sad. Because the joy that I should have to be in my happy and pretty somewhat organized clean home is not there. I feel like I am constantly battling the clutter. Always trying to find a place for things. And somehow when I find a place for it, it somehow manages its way back out of that place I found for it.

   I did not realize what I was missing out on. This is the first time I have ever tried a beauty blender. And both my daughter and I are addicted to it. I need to invest in more than one. Because she keeps stealing it from me. If you have never used a beauty blender before then you are missing out. This product is used to apply foundation makeup. You dampen the blender and then use it to apply your foundation makeup. There are several different techniques you can use when using this blender to apply your foundation. I like a more pouncing motion to apply my foundation giving my face a very air-brushed look while on my neck I use more of a sweeping motion. There are many makeup tutorials out there showing you how to use one. I suggest searching on youtube and playing with the different techniques used.

   This is a super cute lunch tote. It's a personal sized lunch tote and pretty much looks like a very cute stylish purse. I love the Black and white design of this tote. The tote its self is built very well. The canvas on the outside is very nice and sturdy. The inside is insulated as well and it sewn in really strong and keeps our food nice and cold as well. On the outside of the bag is a pocket. You can store anything you want in there. But it would be perfect for napkins or utensils for your lunch.
